I don't disagree with you, But I do want to be safe. I too see that South Texas Diecast lists variations that dont exists, but I still use the site as a reference since they give an insight of any cars or variations they found in the early 2000s. But at the same time I have seen references deleted that eventually get found. I've seen this alot when putting together the HW NASCAR line the Pro Racing series. True I couldn't find any images that it exists, but again, like the Pro Racing series, there are cars that I find that I (or my few HW NASCAR buddies)that have never been seen. In fact I think I have 5 NASCARS that I have yet to post, and If I where to tell you what they looked like, I bet you'll never find them anywhere on the internet. Likewise the White variation Paddy Wagon might be really rare, or you might be right and it was mistaken for grey (or I noticed Silver is a mentioned variation on the Vintage Series page). OR both of them exist. But I do have another theory as to where you might find a White Paddy Wagon:
When putting together the Vintage Series page, all or most of the cars where either easily found or referenced. I would consider these cars the "baseline" of the series. But in my search I found a series of weird 8 pack cars that I don't know the story behind them, if they are International or what. They have cars with different colors from the "baseline", many enamel colors instead of the normal Spectraflame/ meta-flake colors in the Vintage Series. Its tough to find them as searching "Vintage series pack" will give you millions of results, and no, they are not from the Vintage Series/ 25th Anniversary Box sets. Then I remembered I posted a picture of one of these weird sets awhile ago.
As you can see these are colors not referenced in the page, each of these 8 packs have different cars and colors for them, and is a rabbit hole I didn't want to stress over. It was really cool that you found the enamel Pink Paddy Wagon, Grey Silhouette, Grey Splittin' Image and Green Twin Mill loose from the pack blister. I believe those cars came from the weird 8 Pack pictured from above and hopefully you can find more like them. Maybe there, you will find a White Paddy Wagon. And maybe a White Paddy Wagon came from one of those weird 8 Packs, was loose from the pack blister, and someone back then from South Texas Diecast saw it and made a reference on the page. Your guess is as good as mine.
